Preheat oven for 350 degrees.
Measure one cup of a mixture of Cranberries and Brown and Golden Raisins, and place them in one of your bowls with hot water to soak. Place this bowl to the side while you work on your other ingredients.
In a large bowl, added 1 and a half sticks of butter. This can be salted or unsalted.
Add 1 cup brown sugar to the bowl and mix for about 2 minutes or until smooth.
Add one egg to the mixture.
Add 1 and a half teaspoons of vanilla extract and lightly mix again.
In another bowl for the dry ingredients add 3 quarters of a cup of all purpose flour.
Add 1/2 teaspoon baking soda.
Add 1/2 teaspoon of salt.
Add 1/2 teaspoon of ground cinnamon.
Add 2 dashes of nutmeg. If you are a fan of nutmeg, add as much as you like. and mix the dry ingredients with a spoon or whisk.
Add 3 cups of old fashioned oats and mix well.
Add your dry ingredients to your wet ingredients slowly, while mixing with your hand or stand mixer.
Take the raisin and cranberry mixture from their soak and lightly squeeze some of the excess water out. You can pat them dry with a paper towel if you like, or just squeeze them through a strainer. Add them to the mixture.
At this point, you can either add milk chocolate chips to the whole mixture as an option, or split the mixture in half and add the milk chocolate chips to only half the batter as an option.
Bake in the oven for 15-20 minutes. This batter can make 12 large cookies so you will need to check the cookies for your desired soft or hardness of the cookies. I like mine chewy and soft but stiff enough to not fall apart, so I baked mine right around 18 minutes and they were perfect!!!
Enjoy!!!!
